DIY: Grilled Chicken Burrito Bowls, Tacos & Quesadillas.

Who doesn't love a good Mexican restaurant? The scent of grilled chicken, peppers and onions will pull anyone in for a nice meal. What if you could make all of this at home--for less money--and much quicker? No add-on costs, no getting the kids ready, no driving and waiting--sounds amazing, doesn't it? The only thing better than eating Mexican food, is enjoying Mexican food in your yoga casual pants at home. :)



I saw a recipe on Tyson's website for a Beef Fajita Sandwich with Fiery BBQ Sauce, and it reminds me of one of my favorite things to do at home: make a burrito/fajita bar with my {new} Chocolate-Chipotle BBQ Sauce! You can go shopping with me here.

Wanna create a DIY Burrito/Fajita Bar that will please anyone--from small to tall, a bar that has it all?
Well, all you have to do is... set up a few things:

  • Cilantro-Lime Rice (recipe below)
  • Honey Roasted Corn "Salsa" (freezer section)
  • Lettuce (torn or shredded)
  • Cheese & toppings of your choice
  • Black beans or pinto beans
  • Peppers & Onions (freezer section, or fresh)
  • Some tasty salsas (jarred & fresh. Recipe below)
  • Delicious Grilled Chicken (ready in 5 minutes!--see below)

The most important ingredient for this quick burrito bar: Tyson Grilled and Ready Chicken {available in your grocer's freezer or refrigerated section}. It's so easy to prepare this meal in under 30 minutes and everyone loves it!




 Everyone Loves Creating Quesadillas


Children like to help do "grown-up things," such as cooking. Letting children help prepare their own meal encourages them to try new foods {fruits, veggies, herbs}. My little guy really enjoys putting together his own tacos and quesadillas. Tyson Grilled and Ready Chicken makes it very easy for kids to help, because there's no raw meat to cook and the chicken is already in bite-size pieces.




My RECIPE: Chocolate-Chipotle BBQ Sauce



I absolutely love mole-inspired sauces. I love the depth of flavors and the sweet heat that really enhances the meal. I've created a really easy Chocolate-Chipotle BBQ Sauce that's made with everyday ingredients that you can find at your store (inexpensive). This can be made in 10 minutes. Win/Win!





This Chocolate-Chipotle BBQ Sauce tastes great over Cilantro-Lime Rice (recipe follows), burritos, tacos and even salads. It gives a new flavor to ordinary meals.

My RECIPE: Cilantro-Lime Rice





This rice is easy to make and it's excellent in a variety of dishes, including soups, burritos and with my Arroz con Pollo dish (simply make this rice and pour the chicken & broth over it).

This recipe works best with parboiled rice.

TIPS and ADVICE


Here's a quick recipe for Pico de Gallo that I make at home. This is very simple and easy. It's best if you use it within 24 hours so that it doesn't get watery {soggy}. You can alter the recipe by using red onions or adding a different pepper. This is a basic recipe and the sky is the limit in your kitchen.



Remember to remove the seeds from the tomatoes, first, to make the salsa taste the best. This is a mild salsa if you do not use the peppers in the recipe.

Money-Saving Tip




I also want to include a note about the value in buying fresh vegetables. When you buy a bell pepper, for example (this one is organic), you not only get the pepper, but you also get the seeds. Those seeds can be removed and left to dry out and then planted. You can save a lot of money buy planting your own {organic or not} vegetables. Bell peppers are really easy to grow; you can even grow them on your patio in a large plant container. So, don't throw those seeds out! Save them and plant them or pass them along to a plant-growing friend :)

There are many more flavors and varieties of Tyson Grilled & Ready products available. This is a healthy option--all natural, no preservatives--and it's very comparable to the cost of purchasing raw chicken. I, seriously, use Tyson Grilled & Ready chicken often; I adore how quickly it cooks and it's excellent for using when I'm in a hurry to get a meal on the table {without sacrificing quality}. You can put a price on chicken, but you can't put a price on time; I prefer to spend more time with my family and less time with the stove. Tyson Grilled & Ready: It saves you time and money. :)
