Homemade Baked Doughnuts & Peppermint Mocha Latte!

Ready for doughnuts and coffee? Me, too! Peppermint Mocha lattes may not be available at the "pump" of your local coffee shop, anymore, but did you know you can get them all year long? Where? At the grocery store!

Coffee-mate has a Peppermint Mocha coffee creamer that is available year-round. 

I tried it for the first time, last month, and I'm really pleased with the hot & cold beverages that I've made with it. I also picked up a bottle of the Coffee-mate Hazelnut creamer, because that's a staple at my house. I enjoy making my own flavored coffees at home, because it helps me save money (even more with a coupon: seen here.) I love the aroma of hazelnut coffee drinks :) Mmm let's make the #UltimateCup.

Coffee-mate Iced Peppermint Mocha Latte

Ingredients

*Coffe-Mate Creamer-Peppermint Mocha, 4 tbsp 
*Milk (skim milk) organic, 1/4 cup
*Double Espresso (1 shot = 1 oz = 28g), 2 oz 
*ice cubes, 1/2 cup 
*Nestle Dark Chocolate Hot Cocoa Mix 1 tbs 

***If you don't have the ability to create espresso shots, you can brew 6 ounces of strong coffee, instead. Adjust to your personal taste.

Directions


  1. Brew 2 ounces of espresso. (or 6 ounces of coffee)
  2. Pour ice, milk, creamer into a cup.
  3. Mix cocoa with espresso/coffee and pour into the glass.
  4. Garnish with whipped topping and chocolate shavings or chocolate sprinkles.
  5. Serving Size: Makes one Iced Peppermint Mocha Latte

Introduction

Baked doughnuts flavored with Coffee-mate Hazelnut coffee creamer!

Ingredients

*King Arthur Flour Unbleached All-Purpose Flour, 2 cup
*Baking Powder, 2 tsp
*Kosher Salt, 1/2 tsp
*brown sugar, light, pure cane, 1/2 cup
*Milk, 2%, 1 cup
*Grade A Extra Large White Eggs, 2 serving
*Coffee-mate Creamer, Hazelnut, 2 tbsp
*Butter, salted, 2 tbsp
*Pure Vanilla Extract 1tsp

OPTIONAL: Add 1/2 cup of strawberry puree to the batter before baking. Or you can add any fruit puree that you like to bake with. **I used Silk Vanilla Almond Milk, so I didn't use the vanilla extract.

Directions

  1. Sift all of the dry ingredients together. 
  2. With the mixer on low-medium: Beat the egg, milk, vanilla, creamer, and butter together in a separate bowl. 
  3. Turn the mixer down to low: Slowly add the dry ingredients to the wet ingredients while mixing. Mix until incorporated/blended well.
  4. Spoon or pipe into nonstick (or greased) doughnut pan or muffin tins. Fill halfway. Don't overfill.
  5. Bake at 400 degrees Fahrenheit for 10 minutes. 
  6. Let doughnuts cool in pan for a few minutes before transferring to a cooling rack.
Serving Size: Makes approx 12 doughnuts.

Tips

You can glaze them or eat them warm, just the way they are. 




Why Bake Them?

Baking doughnuts not only cuts the fat and calories, it's also safer. I'm not really a fan of the whole
pot-o'-grease vehicle that usually delivers donuts to their racks; I'm taking the baking way out :) 

I know your first thought: But, but, I don't have a doughnut pan! Well, my friend, you don't need one. You can make these in a muffin pan. I used a doughnut pan for example, though. If you want a doughnut pan, Walmart sells them for a great price and they're located with the other pans. I recommend the Wilton pan, because it's truly nonstick and very durable. It's an investment piece that you'll enjoy having around.

The important thing: don't overfill your pans. The doughnuts will rise significantly; if you overfill your pans, the holes will disappear from the tops of the doughnuts. I'll tell you a secret though (ha!)... when that awesome mistake happens, I flip that one over and fill it with cream cheese like a little doughnut bowl. Yum, yum, gimme some!

The Coffee-mate Hazelnut creamer gives the doughnut a pleasant note of hazelnut, without being overpowering. The key is not to overdo it. You will be making the toppings for your doughnuts with the creamer, as well.

Chocolate-Hazelnut Cream Cheese

Ingredients

*Cream Cheese, Philadelphia Reduced Fat- 1/3 less fat) One 8oz Pack
*Confectioners Sugar, 1/2 cup 
*Nestle (Toll House) Cocoa (Powder), 4 tbsp
*Coffee-mate Fat Free Hazelnut Creamer, 4 tbsp 

If you want to make the Hazelnut Cream Cheese, just leave out the cocoa (the white cream cheese seen in the photo).

Directions

Let cream cheese come to room temperature.

In the mixer: Blend cream cheese until smooth.
Add cocoa powder, sugar and creamer.

Continue mixing on medium-high until it becomes fluffy. It will go from very dense, to a more whipped consistency. This takes about 3-5 minutes.

Serving Size: About 12 ounces



Peppermint Mocha~All Year Long

    1. Thank you so much! It was all great--even without the cream cheese, but I was totally hooked on that chocolate cream cheese! I'm making that with fat free cream cheese, next week :) It would be fun if we could have a big breakfast with all of the things that we made :) I'd love to try the flan and latte you made!
