DIY: Grilled Burrito Pizza Recipe.

Well, people, it's July and it's smokin' hot outside, so let's not turn on the oven, ok. Let's head to the great outdoors and grill some pizza and chicken while we keep the energy bill down and the flavor turned up.

Ready to make a pizza? I'm not going to say, "proof your dough." Nope, I'm going to say, "All you have to do is... go to the store and buy a roll of Pillsbury {thick/classic} Pizza Crust from the canned biscuit section," because that's how we roll... the dough for this recipe :)

When you're ready to grill, make sure you have some great recipes (like this one) or your handy stand-by pizza ingredients, and get that grill ready so we can eat, man!

I Tried It~ Look What I Made. I used a pan, instead of making a cool thin crust. It's totally up to you, because it works either way (gotta love options, right?).

Grilled Chicken Burrito Pizza



This was more affordable than ordering out and a lot more fun. You could grab a couple rolls of Pillsbury Pizza Crust to grill both pan-style pizzas and thin crust pizzas (directly on the grill grates).

The Ingredients for my Pizza

  • 1 cup of organic salsa--the quality is fantastic and the flavor is true.
  • 1 cup of canned (organic) black beans
    • or refried beans would be great! Use beans as the "sauce" and put salsa on top after it's done.
  • 8 oz shredded cheese (your choice)
  • 1 cup (organic) Spinach Leaves 
  • Grilled, diced chicken
  • Melted garlic butter (for the crust)




This is how you do it--photo instructions included above. 
  • Roll out the dough
  • Paint the garlic butter on with a sauce brush
  • Grill the Pizza dough until it's ready (varies by grills and temps). If you're topping your pizza with a grilled meat--like chicken--this would be a good time to grill the meat, as well.
    • I marinated the chicken in: juice of one lime, 2 tbs olive oil, 1 tbs chili powder, 1 tbs bbq seasoning (shaker bottle), 1 tbs maple grill seasoning, 3 tbs water. Marinate chicken in marinade inside of zipper bag for an hour or more. The grilled chicken was really, really good.
  • When the pizza crust is done cooking, put the toppings on it.
  • Grill it until the cheese is melted.
  • Slice it and put the greens on top. (slice it first, so that it doesn't get messy when you top it with greens.)
  • Garnish with sour cream (I made a pastry bag from a zipper bag for the sour cream. Just put it in a zipper bag and snip one corner off of the bag and squeeze it on the pizza)




There ya have it, grilling pizza is easy and you should try it! I'm making a nacho pizza next and then a pesto pizza... this is definitely a new "thing" for me, because the sky is the limit.

Pizza is--by far--my favorite food. I love it all.. the more the better lol. I really love veggie pizzas. Also, pizza is a great way to sneak more veggies into your family's meal ;)
