What's Cooking: Amy's Organic Tortilla Casserole!

I love, love, love Amy's Kitchen products! I discovered Amy's Kitchen through a twist of fate and have been buying these products for the last 2 years.

Amy's Kitchen offers a wide variety of Organic/Natural/Vegetarian/Vegan products. Some of the items are: Frozen meals, canned soups & chilies, jarred sauces and frozen burritos. I am very loyal to Amy's Mexican and Indian food choices--You must try these :)


Today, I ate my favorite Mexican meal from Amy's Kitchen--the Tortilla Casserole & Black Beans bowl. Yum! I honestly have given up the option of eating out, to eat this instead (and also for the Palak Paneer).

The Tortilla Casserole bowl is very similar to Chilaquiles. Amy's kitchen describes this meal as: "Made with organic baked corn chips and melted cheddar and jack cheeses. Plus...an assortment of organic vegetables and our own homemade fresh tofu and slow-cooked black beans." Don't let the word "tofu" run you off, if you're not familiar with tofu. The tofu is the little, tiny pieces of protein that you see in this meal; if I didn't tell you that it was there, you would never notice it ;)

This meal smells heavenly and it's delicious from start to finish. I love that the beans are slow-cooked and taste homemade. The casserole is just the perfect balance between moist and crunchy; the salsa is amazingly delicious! This item is also Kosher, Vegetarian, Gluten-free and tree nut free. I wish that every frozen meal tasted like Amy's Kitchen meals; you don't know what you're missing! Pick one up the next time you're grocery shopping :) Amy's Kitchen products can be bought at Walmart, grocery stores and natural foods stores.
