What's Cookin', Good Lookin'? :) Amy's Kitchen Light & Lean Roasted Polenta with Swiss Chard!

It's no secret that I love Amy's Kitchen products, so when I saw this new Light & Lean meal, I just had to try it! It's called Roasted Polenta with Swiss Chard. Amy's Kitchen recently launched a new line called Light & Lean, because many Amy's fans were interested in lower-calorie meals. If you've ever eaten Amy's Kitchen before, you know how amazing their food quality is, so everyone is really excited about our favorite brand releasing new products.

Frozen Meal. Right out of the box.


This meal only has 140 calories! This is incredibly diet-friendly and a nice change from other frozen meals--no pasta, no green beans, no rice.


It cooks very evenly in under 10 minutes. I love the creamy consistency of the polenta; the sauce is fresh and bright; the swiss chard is perfectly "done" without being overcooked.



I like to add a little bit of shredded Parmesan cheese on top of it--the salty, sharpness of the cheese really accentuates the natural flavors of this meal very well. It's always fun to add little extras to frozen/packaged meals to make them "your own." ;)
